We’ll show you how simple and what fun it is selecting the perfect wine to balance the flavour, sweetness, softness and texture of the cheese. A range of exceptional goats milk cheeses are sourced from the Foxenburg Estate, which is situated on the spectacular northern slopes of the Groenberg Mountain just 15 minutes from the centre of Wellington in the Western Cape. Here, a herd of Swiss Saanen goats roam on the certified organic farm pastures for the production of premium quality goats milk cheeses made from 100% whole goat milk, free of preservatives, hormones, antibiotics and artificial colourants.
1. NEDERBURG MANOR HOUSE SAUVIGNON BLANC
Passion fruit, asparagus and green figs with a vibrant acidity and an underlying trace of subtle sweetness rounding off the palate. The acidity in the wine complements the saltiness of the Caprino Romano and the fresh- tasting Chevre.
CHEVRE – A fresh -tasting curd cheese roll, low in salt with a creamy , spreadable texture. Popular amongst the restaurant chefs in savoury dishes and salads.
CAPRINO ROMANO – This is a strong, rich and salty cheese with buttery flavours. With a hard and crumbly texture, it is used for pastas, sauces and shaved in salads and releases the concentrated flavour built up during maturation.
2. NEDERBURG INGENUITY WHITE
Fresh green aromas layered with floral, peach and spice notes. Creamy-textured with a core of racy acidity.
CHABRIS – This is a cheese with a creamy flavour and some acidity, with a soft buttery texture; it can be spread or grilled. It works very well with sweet accompaniments such as green figs and fruit conserves. It also is delicious served with bread and a touch of olive oil, salt, pepper and lemon juice. It is ideal for cheese cakes.
CAPRINO ASSEGAI – A fruity and sharp-flavoured cheese with a compact buttery texture. Excellent as a mild table cheese to be eaten with breads.
3. NEDERBURG THE WINEMASTERS CABERNET SAUVIGNON
Ripe blackberry and currant, mocha and a hint of oak spices with firm, but supple tannins that marry well with the hint of sweetness evident in the Gouda and Shepherd.
FARMHOUSE GOUDA – A versatile table cheese with a nutty, sweet and mildly salty flavour. It is firm but creamy in texture and marries well with peach chutney, quince paste or apricot jam.
SHEPHERD – A perfect balance between sweetness, acidity and salt. The texture is open and crumbly and as it matures it develops the caramel flavour that makes it so distinct from the other cheeses. It pairs well with fruit and is excellent shaved over salads or used grated over pasta dishes as the final touch.
4. NEDERBURG MANOR HOUSE SHIRAZ
Dense, ripe black fruit and wood spice with a firm structure, sinewy tannins and a long finish. It complements cheeses with a full, rounded flavour like the Foxtail or Crottin with its intense robust flavour.
CROTTIN – A small 80gr cheese with a very intense robust flavour both sweet and sour, creamy and mildly salty. The texture can vary from a soft pâté-like texture, to something chalkier and harder as it matures. It is excellent finely grated over pasta, tomato and garlic dishes.
FOXTAIL – Its flavour is sharp, tangy and nutty with a firm texture. It can be grated, melted or shaved over dishes or served on a cheese board with fruit.
* Please note that for the single option, (R55,00) only one cheese is served with each wine. In the case of the double option (R75,00) both cheeses are served with each wine. All cheeses are made from goats’ milk.
